Unraveling the microscopic physics underlying doped Hubbard models constitutes a central goal of modern quantum simulation approaches. The ability of such platforms to perform quantum projective measurements of strongly correlated quantum matter, with full spin and charge resolution, has already led to the discovery of hidden antiferromagnetism in the dimensional Hubbard models. In this talk we introduce the concept of "hidden order” as a new paradigm for constructing non-Ginzburg Landau phases of matter: it connects seemingly disjoint concepts, including spontaneous symmetry breaking, symmetry-protected topological order and error correction. We apply these ideas to generalize hidden antiferromagnetism from one dimensional chains to two-dimensional doped Hubbard models. This leads us to propose a theory of the pseudogap phase as a Higgs-phase of an emergent Ising gauge theory. Our predictions will help guide future quantum simulation experiments: from the exploration of high-temperature superconductivity to the search for novel states of quantum matter.
